Fixum Winery is dedicated to enhancing the native grape varieties of the area, with particular attention to the Groppello di Revò. This red grape variety, whose origins date back to the 13th century, is mainly cultivated in the towns of Cagnò, Revò, and Romallo.
Fixum Winery was founded in 2016 by Davide Busetti, who decided to cultivate vines in a mountainous area of Val di Non, particularly the Rebo variety, which perfectly suits the local conditions. In 2019, Luca Paternoster joined the project, starting a new vineyard in Cagnò, with the Pinot Regina. The winery’s vision is based on the care of the land and innovation, with a strong commitment to environmental sustainability and the promotion of native grape varieties.
The production of Groppello at Fixum Winery is an example of how the company is committed to preserving the wine-making traditions of Val di Non. They follow a handcrafted approach, focusing on the quality of the grapes and respect for the land. The grapes are hand-selected and vinified to enhance the distinctive character of the variety, which expresses itself through fresh and spicy notes. The wine matures in small wooden barrels, allowing it to develop a complex structure. This artisanal process ensures that the Groppello fully reflects the tradition and innovation of Val di Non.
Groppello is made using artisanal methods, with the grapes being hand-harvested and treated with great care. The winery uses innovative techniques to extract the best from this native variety, which stands out for its freshness and aromatic complexity, offering a perfect balance between acidity and tannins.
Fixum Winery also produces Maor, known as white Groppello, another native grape variety of Val di Non.
These grape varieties are descendants of ancient varieties cultivated by the pre-Roman Reti people, who have always lived in this alpine valley along the Noce River. Fixum Winery’s dedication to preserving and promoting these native grape varieties helps keep the wine-making tradition of Val di Non alive, offering wines that reflect the authenticity and history of the area.
