Trentingrana and the Val di Non cooperative dairies

Val di Non has a long history of tradition and art of cheesemaking, which is traditionally organised in cooperative form and bonds together many breeders and their small farmsThere are many villages in the Val di Non that still have their own small local dairy. The members of the dairies deliver the fresh milk every morning and evening and the cheesemakers transform it in delicious cheeses and dairy products.

Most of the milk is used for the production of the famous Trentingrana: in fact, 500 litres of milk are needed for one wheel of Trentigrana!
 
With the remaining milk, each dairy produces its own fresh and seasoned cheese: each one is different from the other according also to the tradition of the village.
