We are always racking our brains about how to eat healthily but for me it’s the most natural thing in the world! My cooking is simple and varies with the rhythm of the changing seasons. In the spring, the fields treat us to the first fresh herbs, such as the dandelions and nosiole. Summer is all about the fruit and vegetables. Autumn is the most delicious period: the days get shorter, the fireplace is lit and the air is warmed with the aromas of dishes of the past.
